Chicken karaage - fry method

Ingredients

  • 1 lb Chicken thigh
  • 2 tbsp Soy sauce
  • 1 tbsp Sake
  • 1 tsp Grated ginger
  • 1 tsp Grated garlic
  • 1 tsp Sugar
  • 3/4 cup Potato starch
  • Neutral oil for deep frying

Instructions

  • Cut chicken thigh in bite size pieces (about 2 inches)
  • Put chicken in a plastic bag or in a bowl
  • Add soy sauce, sake, grated ginger, grated garlic, and sugar
  • Mix well and marinate for at least 30 minutes or overnight
  • Add in potato starch. Shake the bag to coat the chicken pieces well
  • In a pot for frying, pour in oil and turn on heat to medium. Wait for the oil to heat up.
  • Once the oil has heated up, shake off excess flour from the chicken and fry it in the oil. The oil should bubble around the chicken and make crackling noises. This means the oil is hot enough.
  • Fry both sides until golden brown and the chicken is cooked inside. This should take about 3-4 minutes on each side. (You check the internal temperature or you can check by cutting open one piece of chicken and checking to see if it is not raw inside. If it is not raw, then the batch should be done)
  • Remove from oil and put on a rack to let the oil drip down
  • Serve hot and enjoy!
