Lightly oil pan and turn on medium heat
Pour in panko bread crumbs and cook until bread crumbs turn golden brown (this will take a few minutes).
Once golden brown, remove from heat and place on plate. This is the breading station for the pork
Crack and egg in a bowl and mix until combined
Pour flour on another plate
You should have 3 different stations: 1 plate for flour, 1 bowl for eggs, and 1 plate for golden brown panko
Remove pork loin from packaging
Using a meat mallet, pound down the pork to tenderize it
Salt and pepper both sides of the pork
Cover both sides of the pork in flour
Dip the pork in egg and cover both sides
Lastly, place the pork on the panko crumbs and cover both sides. Press down firmly so the panko sticks to the pork
Then place in air fryer and spray with oil on both sides
Air fry at 400F for 8 minutes. Flip pork in between cooking. Check to see if pork is cooked through. (cooking time will vary depending on size and thickness of pork)
Serve with a side of rice and salad, and enjoy!
