Equipment

  • 1 Air Fryer
  • 1 Meat mallet optional

Ingredients

  • 2 Pork loin
  • Dash of salt and pepper
  • 1/4 cup Flour
  • 1 Egg
  • 1 cup Panko bread crumbs
  • Spray oil

Instructions

  • Lightly oil pan and turn on medium heat
  • Pour in panko bread crumbs and cook until bread crumbs turn golden brown (this will take a few minutes).
  • Once golden brown, remove from heat and place on plate. This is the breading station for the pork
  • Crack and egg in a bowl and mix until combined
  • Pour flour on another plate
  • You should have 3 different stations: 1 plate for flour, 1 bowl for eggs, and 1 plate for golden brown panko
  • Remove pork loin from packaging
  • Using a meat mallet, pound down the pork to tenderize it
  • Salt and pepper both sides of the pork
  • Cover both sides of the pork in flour
  • Dip the pork in egg and cover both sides
  • Lastly, place the pork on the panko crumbs and cover both sides. Press down firmly so the panko sticks to the pork
  • Then place in air fryer and spray with oil on both sides
  • Air fry at 400F for 8 minutes. Flip pork in between cooking. Check to see if pork is cooked through. (cooking time will vary depending on size and thickness of pork)
  • Serve with a side of rice and salad, and enjoy!
